I’d like to introduce you to first-time cookbook writer, Rebecca Odessky who has been going through a transformation the last few years while exploring the Keto Diet. My name is Rebecca and I have grown up around cooking. Between my mother’s creativity with food and my father’s experience as a chef, I had found a love for food at an early age. However, I have always struggled with my weight. When I was younger, I tended to overeat and eat when I wasn’t hungry.As I aged, I teeter-tottered between being in shape or overweight. From extreme diets to exercise, nothing seemed to work for me that would keep me consistent. I had found my routine where I weighed a comfortable 110 pounds (I’m 5’0) but soon lost it after I engaged in a relationship in 2016. We found comfort in eating out, or me cooking unhealthy foods, with generous portions. However, as time went on, I found myself using food for comfort when the relationship was rocky and gained a whopping 40 pounds! I went from a size 2 to a size 8 in a matter of 3 years. I had no drive or confidence, my knees would hurt, and I struggled to get off the couch! That was my life at only 26 years old. I became depressed and decided I needed a change. I heard about the Keto lifestyle (notice it is a lifestyle, not a diet) in 2019. I had done extensive research, found support groups, and even began my group on Instagram to keep myself accountable and help others reach their goals. From 2019 to 2020 I lost 40 pounds and have been able to maintain my new and improved weight. I love how I feel, being able to dress up, have confidence, and feel beautiful again. I feel unstoppable, and I hope this book can help you! I wanted to write a book that was equipped with easier recipes, simple instructions, and most importantly simple ingredients! I didn’t want any of my recipes to have to include items that were difficult to find or not natural such as xanthan gum (which if ingested too much can cause intestinal gas and bloating).
